Baked Potatoes with Eggs


Algharbia farms baked potatoes with eggs recipe

Ingredients:

  • 4 large eggs
  • 2 large potatoes
  • 2 tablespoons butter
  • ¼ cup grated parmesan cheese
  • 2 turkey sausages (fried & diced)
  • Salt and pepper

Preparation:

  1. Heat oven to 200 degrees
  2. Scrub potatoes and pierce with fork and bake until fork tender (45 minutes)
  3. Carefully cut each potato in half
  4. Scoop out the inside into a bowl and stir the butter and cheese in it
  5. Fold in the sausages and spoon the mixture back in the potato halves creating a hollow in each center
  6. Break one egg into each hollow and season with salt and pepper
  7. Arrange on a baking sheet and cook until eggs are set (10 – 15 minutes)
