
Ingredients:
- 4 large eggs
- 2 large potatoes
- 2 tablespoons butter
- ¼ cup grated parmesan cheese
- 2 turkey sausages (fried & diced)
- Salt and pepper
Preparation:
- Heat oven to 200 degrees
- Scrub potatoes and pierce with fork and bake until fork tender (45 minutes)
- Carefully cut each potato in half
- Scoop out the inside into a bowl and stir the butter and cheese in it
- Fold in the sausages and spoon the mixture back in the potato halves creating a hollow in each center
- Break one egg into each hollow and season with salt and pepper
- Arrange on a baking sheet and cook until eggs are set (10 – 15 minutes)
