
Ingredients:
- 4 eggs
- 1 tomato (pureed)
- 1 onion
- 1-2 green chilies
- ½ inch piece of ginger
- 3-4 garlic flakes
- 2 tbsp chopped coriander leaves
- Red chili powder
- ¾ tsp turmeric powder
- ½ tsp coriander powder
- ¾ tsp garam masala
- 2 tbsp olive oil
- Salt as per taste
Preparation
- Remove the shells of boiled eggs and cut into half pieces.
- Make a paste of onion, garlic, ginger and green chilies in a mixer or chopper.
- Now, heat oil in a wok and add onion-garlic paste and fry till golden brown.
- Add all the spices salt, turmeric, coriander and chili powder, garam masala (if required).
- Fry the mixture till it starts leaving oil.
- Add tomato puree to it in the end.
- Add a cup of water and cook till it dry’s.
- Leave it to simmer for at least 10 minutes.
- Garnish it with green coriander leave. And your tomato egg curry dish is ready!
