
Ingredients:
- 3 eggs
- 6 cups chicken broth
- Chopped green onions
- ¼ teaspoon white sugar
- 2 tablespoons soy sauce
- 3 tablespoons cornstarch
- 1/3 cup cold water
Preparation:
- Heat chicken broth and green onions in a pot over medium heat
- In a bowl, mix in sugar, soy sauce, cornstarch and 1/3 cups of cold water until smooth
- Reduce heat under chicken broth and stir in soy sauce mixture
- Boil soup on high heat for 1 minute, then reduce heat to medium – low
- Beat 3 eggs with 2 tablespoons of water, stir egg mixture into the soup and cook until eggs are opaque (2 – 5 minutes)
