Algharbia farms Egyptian Ijjeh recipe


  • 8 whipped eggs
  • 1tbsp chopped onions
  • 1tbsp chopped parsley
  • 1tsp crushed garlic
  • 1tbsp flour
  • ½ tsp baking powder
  • 2 tbsp olive oil
  • 1tsp melted butter
  • 2 tsp salt
  • Ground spices
  • Olive oil to coat frying pan


  1. Rub onions with salt and pepper
  2. Add all ingredients to whipped eggs and mix well.
  3. Coat frying pan with olive oil (25cm radius for thick Ijjeh) and bring to medium heat.
  4. Whip mixture again and pour in frying pan.
  5. Cook until eggs are set. You might want to make holes in the mixture to allow uncooked eggs to leak to the bottom every now and then.
