
Ingredients:
- 8 whipped eggs
- 1tbsp chopped onions
- 1tbsp chopped parsley
- 1tsp crushed garlic
- 1tbsp flour
- ½ tsp baking powder
- 2 tbsp olive oil
- 1tsp melted butter
- 2 tsp salt
- Ground spices
- Olive oil to coat frying pan
Preparation:
- Rub onions with salt and pepper
- Add all ingredients to whipped eggs and mix well.
- Coat frying pan with olive oil (25cm radius for thick Ijjeh) and bring to medium heat.
- Whip mixture again and pour in frying pan.
- Cook until eggs are set. You might want to make holes in the mixture to allow uncooked eggs to leak to the bottom every now and then.
