
Ingredients:
- 1kg of spinach washed and chopped
- 3 tablespoons of oil
- 1 onion chopped
- 4 cloves of garlic chopped
- 3 tomatoes mashed
- Salt and pepper
- 1 cup boiled chickpeas
- 1 cup minced beef cooked
- 4 eggs
- Grated cheddar cheese
Preparation:
- Heat oven to 200 degrees
- cook chopped onions on a frying pan then add spinach
- Cook for 5 minutes tillthe mixture is soft
- Add chopped garlic and stir.
- Add mashed tomatoes and cook for 15 minutes then add chickpeas.
- Season with salt and pepper.
- Prepare a tray suitable for the oven, coat it with oil, add a layer of spinach to the bottom then add cooked minced beef, then add another layer of spinach.
- Crack the eggs on the surface and season each with salt and pepper, then sprinkle the cheese on top.
- Cook in the oven till the eggs are set.
