
Ingredients:
- 4 eggs
- 1 large potato
- Olive oil
- Salt and pepper
Preparation:
- Peel and chop the potato into small cubes
- Cover frying pan with a layer of oil and heat on the oven
- Add in the chopped potatoes and stir on medium heat till they’re golden
- Crack eggs into a bowl and add them to the frying pan
- Season with salt and pepper
Stir until the eggs are set, then remove from heat and serve.
