
Ingredients:
- 4 eggs
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1 onion cut into 2 inch pieces
- 1 green bell pepper cut into 2 inch pieces
- 2 ripe tomatoes chopped
- Pita bread
Preparation:
- Heat olive oil in deep skillet over medium heat
- Stir in the garlic, onions and bell peppers until onions have softened and turned translucent (About 5 minutes)
- Add the tomatoes and stir while squishing the tomatoes and simmer for about 25 minutes
- Crack an egg into a bowl and slowly pour it into the tomato sauce, repeat with the remaining eggs
- Cook eggs until whites are firm and the yolks have thickened (3 minutes)
- If tomato sauce gets dry, add a few tablespoons of water
- Remove eggs with a slotted spoon and put on a plate
- Serve with tomato sauce and pita bread
